The Start With … series continues with rotisserie chicken as the focus. While you can certainly buy this wonderful food to serve as a chicken dinner, I buy it as an ingredient to use in recipes. Not only does this stretch the chicken to serve more people, but the recipes are delicious. Start with rotisserie chicken to make fabulous meals.
And there’s another reason I love rotisserie chicken: Food safety. I just don’t like having raw chicken in my home, since it’s basically a given that it will be contaminated with pathogens like Salmonella. The chicken is also perfectly cooked. No matter how good you are in the kitchen, it is very difficult to cook chicken so it is tender, moist, and cooked to the correct final internal temperature.
I find it easiest to break down a chicken when it’s still warm, but not blazingly hot. The skin will come off easily, and the meat releases from the bone. And when I make chicken salads with rotisserie chicken, the meat stays exceptionally tender when it’s cubed and added to the dressing while it’s hot.
