About This Recipe
Pizza is now a classic American food, in spite of the fact that it originated in Italy. Everyone has a recipe for pizza, and there are countless variations. However, this recipe for Cheesy Chicken Club Pizza is one of my personal favorites.
The combination of tender chicken, crisp bacon, tangy mustard, smooth mayonnaise, fresh tomatoes, and melty cheese is just outstanding. And since you start with a purchased pizza crust (and since you have frozen shredded chicken in your freezer since it’s a staple), this pizza takes just minutes to make. It’s perfect for a weeknight meal.
You can find many premade thin pizza crusts in the supermarket. Sometimes they are called flatbreads. One type I like is Stonefire Pizza Crusts. Of course you can make your own pizza crust, or use one of those crusts in a tube.
You can add other ingredients, of course. Use jarred mushrooms (don’t use fresh mushrooms or they will release liquid and make the pizza soggy), sautéed onion, or sautéed bell peppers.
Serve this delicious Cheesy Chicken Club Pizza with a green salad drizzled with creamy ranch salad dressing and tossed with sliced mushrooms and those little Sprinkles tomatoes. Add a glass of beer and some easy cookies for dessert for a fabulous meal in no time.
Tips for best results:
- There really aren’t many ways to mess up this recipe. Just watch the cooking time. There’s nothing worse than burnt pizza.
- Arrange all of the ingredients on the crust evenly so they cook evenly.
- And make sure that the chicken is fairly finely shredded. Big chunks of chicken won’t heat through in the time it takes to bake this pizza.

Preheat the oven to 425°F. Place the pizza crust on a heavy cookie sheet and set aside. |

In a small bowl combine the m mayonnaise, Italian seasoning, and mustard and mix well. Spread this mixture over the pizza crust. |

Evenly top the sauce with the chicken, then add the remaining ingredients in the order given. |

Bake the pizza for 10 to 15 minutes or until the crust is golden brown and the cheese is melted and starting to brown in spots. Let cool for 5 minutes, then cut into wedges to serve. |
