There are a lot of fun Halloween foods you can make (including my Owl Cupcakes!). But none are much cuter than these Boo Burgers Mini Sliders. They are miniature sloppy Joe sandwiches, and they couldn’t be more easy.
To make these Boo Burgers Mini Sliders, you just sauté some ground beef and onions, and add tomato paste and a bit of ketchup, then put the mixture into split and toasted whole wheat mini buns. A couple of sliced olives with pimentos make the “eyes” on the adorable sandwich.
You can use ground chicken or turkey in place of the ground beef, or choose pork sausage. Just use what you and your family like.
These little sandwiches are perfect for Halloween, especially since your kids should eat something before they venture out trick-or-treating. They will be less likely to munch on candy (before you’ve had a chance to inspect it!) if they aren’t hungry.
So serve these little Boo Burgers with a green or fruit salad and a big glass of cold milk. And have a Happy Halloween!
How to make the best Boo Burgers Mini Sliders:
- Make sure that you use ground beef within three days of purchase for food safety reasons.
- Cook the ground beef thoroughly, also for food safety reasons. Stir the beef as it cooks so it breaks up. Big chunks of beef won’t work in these mini sandwiches.
- Don’t put a lot of the meat mixture into each bun because it will be too messy to eat.
- For little kids, let the meat mixture cool for about 15 to 20 minutes before serving, because it’s very hot right from the stove.
Why this recipe works:
- The combination of well seasoned ground beef and tomato is accented by mustard and is delicious served in toasted mini buns.
- And the olives are a cute finishing touch!

In a large skillet brown the ground beef with the onions and garlic, over medium heat, stirring to break up meat, until it is thoroughly cooked. Drain if necessary. |

Add the tomato sauce, tomato paste, ketchup, mustard, and thyme leaves and bring to a simmer. Reduce the heat to low and simmer for 10 minutes, stirring frequently, until thickened. |

Serve the meat mixture in the split and toasted buns. Add the green olives slices to make "eyes." |
