About This Recipe
Everyone has, of course, eaten the traditional Chex Party Mix. But what if we boosted the flavor of that classic recipe? A lot? Well you’d get Curried Party Mix, a fabulous twist that uses the most decadent nuts along with Chex cereal and a highly flavored butter mixture to coat everything. Yum.
You can use one type of the cereal (it comes in wheat, rice, and corn varieties), or you can mix and match. To me, they don’t really taste different, but they are a little different visually for more interest.
And you can add your own favorite ingredients. Those garlic flavored bagel chips would be fabulous, or some little cheese crackers. Some dried fruits would also be good – think dried cranberries or cherries or even little dried currants (add those after the mix has baked and cooled). Just keep the butter/curry powder mixture the same please! Unless you want to increase the curry powder amount …
This is a great recipe to have on hand to feed hungry teenagers. You can put it out before a party (especially the Super Bowl or any sports-type gathering). Or you can hide it and eat it yourself.
Tips for the best Curried Party Mix:
- Watch the mixture carefully while it’s baking. You want the cereal and nuts and any other ingredients to toast nicely, but you don’t want anything to burn. If it burns you have to start over because that acrid flavor is not what you want.
- Stir the mixture gently but thoroughly as the recipe directs. This helps everything toast to perfection and prevents burning.
- Let the mix cool completely on paper towels before you store it. The paper towels will absorb any excess oil or butter that the cereal didn’t absorb so the mix will be beautifully crisp and crunchy.

Preheat the oven to 250°F. In a large bowl, combine the cereal and nuts. |

In a small saucepan over low heat, melt the butter and olive oil together. Add thee curry powder and mix well. |

Drizzle the butter mixture evenly over the cereal mixture, stopping to toss the cereal every now and then. |

Spread the mixture onto a jelly roll pan and arrange in an even layer. Bake for 40 minutes, stirring every 10 minutes, until the mixture is crisp and slightly more golden brown. |

Spoon the mixture onto paper towels and let cool completely. Store in an airtight container at room temperature up to four days. |
