Sandwiches are one of my favorite foods all year round, but especially in the summer. When you have the right ingredients on hand, you can make a sandwich about just about anything in a matter of minutes. And with fresh tomatoes from the garden, this Mini Tomato Chicken Croissant Sandwiches recipe can be on the table in less than 20 minutes.
I am very particular about my sandwiches. I have to have bread that will stand up to the filling. There’s nothing worse than eating a sandwich and ending up with two flat squashed pieces of soggy bread at the end. The bread must last all the way until the last bite. This is why I like using toasted English muffins and flaky croissants for my sandwiches.
And my sandwiches must always be made with mustard and mayonnaise. Those two ingredients combine to both act as a glue to hold the sandwich together, and add fabulous texture and taste. The mayonnaise is tangy and velvety smooth, and the mustard adds a spicy tang you can’t get with any other ingredient. You, of course, are free to use anything from Buffalo hot sauce to ketchup to some type of creamy salad dressing on your sandwich.
There aren’t a lot of ingredients in this sandwich so they must always be of best quality. I get my chicken from rotisserie chickens every time I need cooked chicken. The meat is always tender and perfectly cooked. And the tomato must be tender and sweet and incredibly juicy.

Slice the croissants in half lengthwise. You can toast them briefly if you'd like. |
